This holiday season, why not try something different and have an authentic Southwestern holiday dinner with the family? This year Reading Arizona is sharing authentic Southwestern recipes for the holidays that have been used throughout Arizona since 1911. Apple Biscuits

  • 2 cups Flour, sifted
  • 1 tsp. Salt
  • 4 tsp. Baking Powder
  • 4 tbsp. Shortening
  • ¾ cup Milk
  • 3 Cooking Apples
  • Sugar
  • Cinnamon
  • ¼ cup Butter

In a large bowl, mix flour, salt, baking powder, shortening and milk until smooth. Peel and core apples and cut into quarters. Fill greased muffin pan half full with dough. Press and apple quarter into the center of each muffin cup. Sprinkle with sugar and cinnamon. Put a small amount of butter on top. Bake in a 350 degree oven for 10 minutes or until apples start to liquefy. Serve with apple juice and honey. Makes 12 biscuits.
